Quercia al Poggio makes small quantities of Vinsanto in the Florentine tradition. The clusters are hung from the ceiling of a well-ventilated drying room and left to dry out completely. Once they have reached a high concentration of sugar, the berries are detached from the bunchstem by hand and gently pressed in small, specially designed presses. The sweet amber juice obtained is transferred to the caratelli along with the “mother”, the concentrated residue of Vinsanto from previous vintages, and left to mature until it has acquired the plush mouthfeel and dried fruits fragrances that set this wine apart.
